Roast Veg and Potato Platter with Hummus
This is a super yummy dish and is packed full of nutrients, you get a protein hit from the Hummus, so every aspect of nutrition is pretty much covered with this.

Roast Veg & Potato Platter with Hummus
Serves 2
Ingredients
2 corn on the cobs
1 aubergine cut into slices
1 red pepper cut into chunks
2 leeks trimmed and halved
2 portobello mushrooms
360g of baby new potatoes – halved
4 tomatoes quartered
6tbsp of low fat hummus
Method
- pre heat the oven to 180c.
- Line a large baking tray with greaseproof paper and place the corn, red pepper, leeks, mushrooms and tomatoes on the tray, line the aubergine slices around the side so they are almost sitting up. Season well. Bake for around 35-40 minutes.
- Wash the potatoes and place in a steamer or or boil for 20 minutes or until tender.
- Put the hummus in 2 small dishes and put in the middle of each plate. Then add the roast veg around the side and the potatoes and serve!
