Vegan Pancakes, Yogurt & Warm Berries & Banana

A really nice Sunday morning treat! Pretty easy to make and really tasty to eat. A nice slow energy release from the wholemeal flour, nutrients from the fruits and a little protein from the yogurt

 

Vegan Pancakes, Yogurt & Warm Berries & Banana

Serves 2

Ingredients

1 cup of wholemeal Self raising flour

1 cup of dairy free milk like unsweetened almond/soya

1tsp vanilla essence

2tsp Dairyfree spread, I used Asda Sunflower spread – Melt it in the Microwave for 30 secs

1tsp olive oil for cooking

200g of Alpro yogurt – Plain or Almond work well

2 handfuls of frozen mixed berries

1 banana sliced

Method

  1. Put the flour in a bowl. In a jug mix the milk, vanilla essence, dairy free spread together and pour into the flour, mix well until smooth.
  2. Heat a non stick frying pan and add the oil, make sure it is hot before you put the pancakes on. Use a dessert spoon to add the mixture to the pan, make them as thin as you can so they cook right through. You will probably get around 10 small pancakes. Cook a minute or so on each side.
  3. Heat the berries in the microwave for 1 min 20 secs, plate the pancakes, add the yogurt, banana and berries and eat.
